I have a notion that Chinese weddings are the best. Not because I’m culturally biased, but because: 1) There’s very few speeches at Chinese Weddings and people leave after the meal, 2) You always know what’s going to be served for dinner at a Chinese wedding, 3) There is always roast suckling pig.
Everyone has a version of roast pig. The Italians have Porchetta or Maialino Allo Spiedo. The Spaniards, Filipinos and other former spanish colonies have Lechón. Even the Americans have multiple versions, with the Hawaiian pit roasts enthralling tourists and the Cajun Cochon de Lait festival doing much the same in the southern states.
But I love the classic Chinese roast pig. It has the perfect mix of puffy, crispy roast skin, a beautiful and not overly thick layer of white fat below the skin, and a dense flavourful meat to keep everything together. It is the best thing… possibly ever.
